Had a plethora of tomatoes given to me (again!) and this time I decided to make a salad with them, although I was seriously tempted to bake them all like last time. Those were so darn good. But it was a hot day, so I chopped & stirred and got this:
Tomatoes
Cucumber
Feta Cheese
Balsamic Vinaigrette
(all quantities were eye-balled)
My husband wasn't too thrilled at the first sight of it. "Where's the lettuce???" But he tried it and I'm happy to say he liked it!
